Mediterranean Chicken Sammies

This one is very, uhm, loosey-goosey, on my part because I do not usually measure when I cook, I’m sorry!! It is a terrible lifelong cooking habit, and I try to remember to measure when I am going to be sharing my recipes with you all, but sometimes I get to listening to my music, balancing toddlers, or rushing through dinner prep and I Just. Plain. Forget. I am sorry. SO, I will give you approximate amounts here, but please modify based on what intensity of flavor you like!

Ok, here we go! This is a juicy, flavorful filling sandwich that I LOVE for dinner – yum!!

What You’ll Need (for 4 sandwiches):
4-5 chicken tenderloins
approx. 2 Tbsp balsamic vinegar
approx. 3-4 Tbsp. olive oil
approx.. 1 tsp each salt and pepper
approx.. 1 Tbsp. lemon juice
approx. 1 tsp each paprika, Italian herbs, onion powder and garlic powder
approx. ½ tsp crushed red pepper
4 ciabatta buns (for a lower carb. option, you can use whole wheat pitas)

Toppings:
mayonnaise, lettuce, tomato, green olives, artichoke hearts, feta cheese

What To Do:
Mix together balsamic vinegar, olive oil, lemon juice, herbs and spices until well combined. Place chicken in a large bowl or Ziploc bag, toss with the mixture until well coated and allow to marinate for at least an hour in the fridge. I got mine together in the morning and just left it in the fridge until I was ready to make dinner – delicious, deep flavors y’all!

When you’re ready to make dinner, take chicken out of the bag, and saute in about 2-3 Tbsp. of olive oil. You can saute in the spice mixture, but just be aware that they may have a bit of an overwhelming flavor at that point! Cook until caramelized on the outside and cooked through on the inside. Turn off heat and allow to rest for a minute while you get the rest of the sandwich together.

Cut and toast ciabatta buns – drizzle with olive oil, sprinkle with a bit more onion powder, Italian herbs, salt and pepper and add a touch of mayo if you like. Layer green leaf lettuce, chopped green olives, juicy tomatoes, and feta cheese – they are also delicious if you add some marinated artichokes!

Slice chicken and layer on sandwich and dive right in! This is a big sandwich but so satisfying!
