Quinoa Brownies

Y’all. I have struck GOLD! For those of you that are like me and need just a tidge of chocolate every now and again (like 3pm on Friday 😂) but are hesitant to sacrifice the diet to satisfy that craving, I have created some gluten-free, dairy-free AND sugar-free brownies! And all the people said hallelujah!!

These are seriously one of my favorite inventions ever. You have to go into this experience, of course, knowing that they aren’t traditional brownies, and that they will have a slight difference in texture, but if you are like me, the texture difference is so worth it to know you aren’t sacrificing your healthy eating habits by needing to have a bit of chocolate every once in awhile.

Without further ado, I give you my guilt-free quinoa brownie recipe! As a sidenote, these were toddler, husband and brother approved and disappeared pretty darn quickly from my kitchen!!

You’ll Need: (for an 8 x 8 pan, about 16 brownies)

1 ½ cups cooked quinoa
1 ½ cups ground slivered almonds or almond flour
¼ cup coconut oil
¼ cup olive oil
1/3 cup unsweetened cocoa powder
½ tsp salt
1 ½ tsp vanilla
½ tsp cinnamon
1 ½ tsp baking powder
1 tsp baking soda
1 cup pitted dried dates (not chopped dates, as they contain added sugar)
2 eggs
2/3 cup unsweetened almond milk

Optional: about ½ cup dark chocolate morsels (omit if you want the recipe to be strictly dairy and sugar free)

What To Do:
Cook quinoa according to package directions (I cook up 1 cup of quinoa with 2 cups of water which makes about 2 cups of cooked quinoa and just use the extra for lunch for the kids!)
If you are using almonds, grind them until fine using your food processor, or nutribullet if you have one!
Preheat oven to 375 degrees.
Combine olive oil and coconut oil in a medium bowl and microwave for 30 seconds. Whisk cocoa powder into the oil until blended and there aren’t any lumps. Add salt, vanilla, cinnamon, baking powder and soda and whisk until combined.
Using your nutribullet or food processor, grind dates together with eggs until mostly smooth and creamy – its nearly impossible to not have any chunks of date left, but do your best! (Sidenote: please check your dates for any remaining pits! I have had two batches of cookies ruined because of a pit left in, so double check so you don’t cause dental issues in your household!!)
Add the date mixture to the oil and cocoa powder mixture and mix thoroughly. Add milk and mix. Stir in quinoa and almonds and mix until all incorporated.

Turn into an 8 x 8 square baking pan – mine is silicone, but if you have a standard pan, spray with cooking spray first. Bake for about 30 minutes until set.

Remove brownies from the oven and allow them to cool for about 10 minutes before you try to do anything with them – since they are a different consistency, they can crumble if you don’t let them rest.

Note: I sprinkled a handful of dark chocolate morsels on top before baking because these need to be enticing to the non-dieters in my household…and that’s the only reason I added them : ) They would obviously add some sugar and dairy if you chose to add them as well, so be mindful if you are strictly avoiding dairy and sugar.
