Hey y’all! I have been practically living off of chia pudding for breakfast and snacks for the past few months, and wanted to share with you two fall-flavored variations I came up with!
The first one is Chai Chia Pudding — try to type that ten times fast, I dare you!! It is sweetened with honey and is dairy-free, so is a great, healthy breakfast idea. Chia seeds are very filling, and the taste and texture of this pudding feels like you may be getting away with something…but its all good for you!
To make it you’ll need:
1 tsp cinnamon
½ tsp each ground ginger, ground cloves, nutmeg
¼ tsp cardamom, black pepper
3 Tbsp chia seeds
3 tsp vanilla extract
3 Tbsp honey
3 Tbsp unsweetened almond milk
1 can unsweetened coconut milk
Its super simple to make — just whisk together spices and chia seeds. Add milk and honey and microwave for 1 min – whisk again to incorporate the honey thoroughly.
Refrigerate overnight and then enjoy for breakfast or dessert!
The second version I made was a Pumpkin Pie Chia Pudding. So yummy, and makes you feel like Thanksgiving is right around the corner! It is also dairy and sugar free.
For this one, you’ll need:
1 can coconut milk, unsweetened
¼ cup almond milk, unsweetened
5 packets powdered stevia
2 tsp pumpkin pie spice
2 tsp vanilla extract
6 Tbsp pumpkin puree
5 Tbsp chia seeds
Just whisk everything together and refrigerate overnight! Eat plain or its also delicious with walnuts and sliced bananas.
