Savory Waffle Breakfast Sammies

I LOVE breakfast foods; they’re one of my favorite food groups, in fact! But, let’s face it – with small kiddos running around, work schedules, and the general helter-skelterness of life in the morning, we rarely have full out breakfast feasts unless its a special occasion. BUT I do enjoy breaking out the good stuff once in awhile for breakfast for dinner — anyone else? Delicious, homey, and crowd pleasing dinner — win win!

I came up with this savory waffle recipe because my husband got a new waffle maker last year and we don’t get to use it often – but I had a dilemma because I wanted to have egg sandwiches for dinner! Sweet waffles sounded gross, so I gathered up some of my savory ingredients and, voila! I have to say, was really pleased with how they turned out! Here you go!

You’ll Need:
2 cups all-purpose flour (for fellow MTHFR’s, be sure it is a non-enriched blend!)
1 Tbsp baking powder
1 tsp sugar
1 ½ tsp salt
4 Tbsp melted butter
2 Tbsp vegetable oil
2 eggs
1 ½ cups milk
½ tsp onion powder
½ cup finely grated parmesan
1 minced green onion
2 Tbsp water ** I needed to add this because we have the funnel type of waffle maker which needs very runny batter – if you have a traditional waffle iron, you may not need this! **

What To Do:
Combine all dry ingredients and whisk until thoroughly combined. Make a well in the center, and add the wet ingredients, mixing until uniform – add green onions and parmesan, and slowly mix all wet ingredients into dry until mixed.

Cook waffles until very CRISPY! You want them to be substantial so they can hold up the sandwich.

For our sandwiches, we chose bacon, eggs and cheese, but these sandwiches would be delicious with sausage, spinach, ham, arugula, smoked salmon….you name it! Get creative!

I cooked our bacon on a rack over a cookie sheet in the oven at 250 degrees for about 25 minutes until it was nice and crispy. I fried some eggs with paprika, salt, pepper, and a touch of cayenne – I topped them with a small amount of cheese and allowed it to melt.

It’s super easy from there – just assemble the sandwiches and enjoy! They are rich, full of savory flavor, amazingly messy and quite delicious! Enjoy!
